U Museu rampe Ribanelle in the haute ville at the foot of the citadelle, 30m down rue Colonel-Feracci. Congenial and well-situated place. Try the €14 menu corse, featuring lasagne in wild-boar sauce, trout, and tripettes (imaginatively translated as "trips"). Their hot goat's cheese (chèvre chaud) salad, filling enough for two, comes on a groaning bed of richly flavoured potatoes. Great value for money, atmospheric terrace and the house wines are local AOC.

Le Paglia Orba 1 av Xavier-Luciani tel 04.95.61.07.89. Quality Corsican cooking at very reasonable prices, served on a raised terrace overlooking the street. Most people come for their succulent pizzas (€6–8), but they also offer plenty of choice à la carte, particularly for vegetarians. Pan-fried veal served with stozapreti (nuggets of brocciu and herbs) is their plat de résistence. Menus from €13.

Au Plat d'Or place Paoli tel 04.95.46.27.16. The classiest option in Corte: Corsican specialities made from locally produced ingredients, and served under awnings on the shady side of place Paoli. Meat and seafood dishes are their forte, but they also do pizzas, pastas and home-made desserts. Menu for €19 (four courses). Closed Sun.
