The centre of the cheese country is the old town of LIVAROT, with the appealing hotel and restaurant Du Vivier (tel 02.31.32.04.10; €30–40) in its heart. Set in a grand house near the Vie river on its western outskirts, the Musée du Fromage illustrates the history and manufacture of Livarot's eponymous cheese, and doles out free samples (March Tues–Sat 2–5pm; April & Sept–Oct Mon–Sat 10am–noon & 2–6pm, Sun 2–6pm; May–Aug daily 10am–noon & 2–6pm; €3).
