In addition to the establishments below, more caviar, along with truffles, foie gras, etc, is to be found at the lower end of rue Montmartre by the Forum des Halles in the 1er.

Caviar Kaspia 17 pl de la Madeleine, 8e. Blinis, smoked salmon and Beluga caviar. M° Madeleine. Mon–Sat 10am–1am.

Comptoir du Saumon 60 rue François-Miron, 4e and several other addresses. Salmon especially, but eels, trout and all things fishy as well. Plus a delightful little restaurant in which to taste the fare. M° St-Paul. Mon–Sat 10am–10pm.

Petrossian 18 bd de Latour-Maubourg, 7e. Not just gilt-edged fish eggs, but other Russian and French delicacies too. You can try delights such as smoked salmon sorbet at the restaurant next door. M° Latour-Maubourg. Mon–Sat 9.30am–8pm.
